团队介绍:

乳品科学与技术研究团队,现有教师6名,其中教授/研究员2名,副教授/副研究员3名,讲师1名。围绕乳品基础科学与应用技术研究领域开展了多项创新性工作。同时,研究团队积极服务区域产业,团队成员为宁波市个人及团队特派员,通过深入产业研发及生产一线,将产业前沿技术与生产实际进行高效互动。解决了宁波当地企业乳酸菌饮料加工关键风味指纹图谱的构建与产品开发、区域发酵制品中功能菌株筛选与产业应用等难题。入选国家人才1人,浙江省杰出青年人才1人,宁波市人才3人。近五年团队成员主持国家科技计划、国家自然科学基金、浙江省杰出青年基金、浙江省重点研发计划课题等项目20余项,在《Trends in Food Science and Technology》、《Food Chemistry》、 《Food Hydrocolloids》、 《Journal of Agricultural and Food Chemistry》和《Food Control》等食品SCI TOP期刊发表论文50余篇,授权发明专利30余件,以第一完成单位先后获教育部科技进步一等奖、浙江省科学技术奖二等奖、浙江省自然科学二等奖、宁波市科技进步奖三等奖等科技奖项。



团队特色

针对乳品加工领域的国家需求和地方生命健康产业发展导向,本团队(方向)重点要解决的关键问题是:

1)发酵制品产业中的核心乳酸菌菌株特性研究与功能应用;

2)多元菌株发酵过程中的SIMSingle in Mix)技术开发;

3)特征性乳酸菌代谢产物的鉴定与互作分析;

4)乳酸菌及功能性乳蛋白及肽的营养功能评价技术

5)乳品原料及发酵乳检测前端关键技术集成应用

团队拥有千余株自主产权的功能性发酵菌株,申请包括多种发酵乳制品、干酪产品、液态奶、功能性乳饮料等乳业科技相关专利30余件。



主要研究方向

研究团队主要研究方向聚焦功能性乳酸菌及其代谢产物的筛选与评估;益生乳酸菌发酵剂及功能性发酵制品研发;乳源生物活性物质挖掘与制备;功能性配方多元蛋白乳制品的产品开发;原料乳及乳品加工过程中关键危害因子溯源及快速检测。
